Kaufmann's is what a proper old-school Cleveland butcher shop is supposed to look like. Three generations of the Kaufmann family have run it out of the same Broadview Road storefront since 1966, and the case still runs the way it did then: whole primals broken down on-site, dry-aged bone-in ribeyes cut to order, and a house-made bratwurst that regulars drive 40 minutes for.

If you're shopping for a holiday, this is one of the few remaining shops in Northeast Ohio that will take a standing rib roast order — 3-, 4-, 5-bone, dry-aged or fresh — and hand it to you two weeks later exactly the way you asked. The same is true of fresh hams, crown roasts of pork, and prime brisket for people who want to smoke at home.

Ask for whoever's at the counter to walk you through what's dry-aging that week. They keep 21-, 30-, and 45-day options going most of the year.
